Meri and Marcus first set foot on St. John together for a special occasion: celebrating Meri’s friend Val’s 50th birthday. The island’s lush hills, crystal-clear water, and laid-back energy cast a spell on them. It wasn’t long before they looked at each other and said: we have to bring the family here.

They made it happen. A return trip — this time with their daughters, and Marcus’s brother Scott and his wife Pam — for a week-long stay in a stunning villa perched above Chocolate Hole. The view? Unbeatable. The vibe? Pure joy. And the blender? Always running.
As the sun blazed and the pool sparkled, fruity concoctions began taking shape. After a few rounds of “add a little more of this” and “how about some coconut?”, the ultimate frozen drink emerged:
a creamy, strawberry-pineapple-lime cocktail with a rum-forward finish.

A frozen favorite, this tropical delight brings the Caribbean home:
Ingredients:
- 2 oz white rumÂ
- 1½ oz cream of coconutÂ
- 2 oz strawberry daiquiri mixÂ
- ½ cup fresh (or frozen) pineapple chunksÂ
- ½ oz fresh lime juiceÂ
- 1 cup iceÂ
Instructions:
Blend all ingredients until smooth and pour into a tall glass. Garnish with pineapple or strawberry. Kick back. Smile. Repeat.
